Tasty and Healthy Greek Feta Omelette Recipe

This amazingly tasty and healthy Greek Feta Cheese Omelette is the perfect start to the day for a filling breakfast, or makes the great lunch or light dinner. Omelette is very versatile and can be eaten any time of the day in my opinion! It’s very simple to make with just a 5 minute prep time and a total cooking time of less than 15 minutes and is suitable for vegetarians, gluten free and Slimming World friendly. I designed this omelette based around my husband and son’s two favourite things – cheese and olives, but I don’t personally like the taste of olives, and I know that I’m not alone. I think they’re often either a love it or hate it kinda thing. When you make this omelette with Feta cheese and olives it has a very Mediterranean and Greek feel to it, but I also make it without olives when I’m the only person eating it which is why I’ve left them optional in the recipe. You can serve with olives on the side for the olive lovers and this has been very popular in my family.

Cheddar cheese can be quite a sharp flavour and is also very dense and calorie heavy. Feta has a delicate yet distinctive Mediterranean flavour whilst still being healthy. They say the Mediterranean diet is one of the healthiest! This Greek Feta omelette might be one of the best omelettes I’ve ever tasted and the whole family loves it, from the toddler up to the grandparents. It comes up so light and fluffy but is still really simple to make.

Equipment used for the Greek Feta Omelette

You’ll need some very basic kitchen equipment for this recipe!

  • Non stick frying pan
  • Non stick spatula
  • Weighing scales
  • Sharp knife for cutting
  • Jug or bowl to whisk eggs in
  • Either a hand whisk or fork for the eggs
  • Plate or bowl to serve
  • Hob
  • Grill

As you can see I served it with some cherry tomatoes, red and yellow bell peppers, which were fried in frylight spray with salt and pepper. I often get asked about the plate set that I use for serving, it is the Vancasso Haruka Set on Amazon but it can be served on a plate or bowl as preferred.

Low Calorie, Healthy and Slimming World Friendly

This is a healthy lunch with oodles of good vitamins and calcium, coming in at 208 calories per portion. If you’re on Slimming World, the feta cheese will come in a 3.5 Syns per portion, everything else in this recipe is Syn free.

Low Carb / Keto Greek Feta Omelette

There are just 1.9g net carbs (2g carbs, 0.1g fibre) per serving in this Greek Feta Omelette, making it an excellent option for those who are low carb or on a ketogenic diet.

Gluten Free Greek Feta Omelette

This omelette is gluten free – no substitutions required and is suitable for those with Coeliac disease or with a gluten intolerance.

Storage and Heating Instructions

According to the FDA at time of publication, cooked eggs and egg dishes may be refrigerated for serving later but must be thoroughly reheated to 165F (73c) before serving. This recipe makes 4 portions which means my family usually has leftovers, I have refrigerated this and then eaten it the next day after microwaving for 3 minutes. It is very easy to modify this recipe to serve the exact amount if you don’t want leftovers.

Ingredients

  • 8 eggs
  • 100g red onion, cut into small wedges
  • 100g cherry tomatoes, sliced in half
  • 100g feta cheese, crumbled
  • half a teaspoon of paprika
  • salt and pepper to taste
  • frylight spray or teaspoon olive oil
  • (optional) sliced olives, black or green to taste

Instructions

Heat your frying pan on the hob to high with the oil or low calorie spray and fry the red onion until browning, approximately 2-3 minutes.

Whilst this is frying, whisk your eggs in a large bowl with the paprika, salt and pepper to taste.

Add the sliced tomatoes to the onions in the pan and (optional) add sliced olives, black or green to taste.

Fry for a further 1-2 minutes until tomatoes and olives are beginning to soften.

Turn your heat down to medium and add the whisked egg, cook until eggs are beginning to firm but not fully cooked, usually around 3-4 minutes. The top of the omelette will still be runny but the edges and bottom will have firmed up.

Add your crumbled feta evenly to the top of the mix.

Place under the grill on high for 5-6 minutes, which will give you a fluffy, evenly cooked omelette.

Cut into quarters in the pan and serve with a side of salad, tomatoes or red peppers if desired. Also pairs well with fresh rolls and butter.

Hearty Healthy Mince Beef Hot Pot (Gluten Free)

This Mince Beef Hot Pot is very simple to prepare, taking just 15-20 minutes of preparation time and then 2 hours in the oven, so you can set a timer and have it ready for the dinner table. It’s filling and delicious, ideal for any time of year, but particularly good when the weather starts getting cold and you want something traditional and homey to fill the family up.

This recipe is healthy at just 391 calories per portion, slimming world and weight watchers friendly, yet filling and satisfying. You can serve it as a complete meal, or add sides such as fresh bread and butter, broccoli, corn on the cob or roasted vegetables. The whole family from toddlers to grandparents will love this meal.

This recipe serves four and instructs you to cook it in one dish, but you could cook this in smaller dishes for freezing or for meal prep. It makes a great lunch and is freezer friendly and microwave friendly.

Please check that the stock cube you use to make your stock is syn free as this may vary, but the ones I buy from Aldi are!

Gluten Free Mince Beef Hot Pot

This Mince Beef Hot Pot recipe is gluten free as long as you check the ingredients for your stock cube or substitute with a gluten free gravy.

Vegetarian Hot Pot

To make this recipe vegetarian simply replace the minced beef with Quorn mince and use vegetable stock instead of beef stock. This is a very simple recipe to make for a vegetarian and tastes delicious!

Hearty Mince Beef Hot Pot

If you are looking for a higher calorie meal you can use full fat minced beef rather than lean 5% minced beef and glaze the potato topping with butter. It’s a very versatile meal and should someone in your family not like one of the vegetables it’s easy to experiment and mix different vegetables into the dish.

Mince Beef Hot Pot

Ingredients

  • 500g lean 5% fat minced beef
  • 500g sliced potato
  • 250g diced onion
  • 200g sliced carrots
  • 200g sliced parsnips
  • 150g frozen peas
  • 500ml beef stock or thin gravy (check for gluten if making gluten free)
  • salt and pepper
  • one-cal frying spray or teaspoon cooking oil
  • (optional) 50g salted butter to glaze

Instructions

Preheat your oven to 180C.

Prepare your vegetables by dicing your onions, slicing your parsnips and carrots into comfortable chunks and slicing your potatoes thinly.

Fry your onions on a medium heat in a large frying pan using a few sprays of one-cal frying spray or a teaspoon of cooking oil for a few minutes until soft and starting to brown.

Add your minced beef to the saucepan and fry until browned.

Add the carrots, parsnips and peas and salt and pepper to taste.

Stir well and add your 500ml beef/vegetable stock. You can also use a thin gravy substitute here.

Fry for 5-10 minutes until softened and then transfer into a large shallow baking dish.

Layer your potatoes on the surface, cover in foil and pop in the oven at 180C for 1 hour.

Remove the foil, (optional) glaze the potatoes with 50g melted butter and place back in the oven for a further 1 hour or until slightly browned and potatoes are soft when tested with a knife.

Serve as a complete meal or with a side of fresh bread and butter, roasted vegetables, corn on the cob, broccoli or cauliflower.
